Ceramic baking beans are perfect for blind baking.
Fit the pastry to the flan dish, prick the base well with a fork, cover the pastry with baking paper and place the beans on top - bake your pastry as
normal. The weight of the beans prevents the pastry from reducing in size and coming away from the dish. The beans can be used over and over again.
